Burballes amb conill

To start, cut the rabbit into small pieces and season with salt to taste. In a large pan with olive oil, fry the rabbit until golden brown. Remove the rabbit from the pan and set aside. In the same oil, fry a chopped onion, some garlic and two grated ripe tomatoes until they are very tender and caramelized. Add sweet paprika and a bay leaf. Next, add clean and quartered artichokes, fresh peas and sliced mushrooms. Stir well to combine all the flavors. Put the rabbit back in the pan, add water or meat stock to cover the ingredients and let it simmer for about 20 minutes. Add the burballas, which are a type of flat, short pasta, and cook until done, about 10-12 minutes. Season with salt and pepper, and let rest for a few minutes before serving.

Arròs brut

The raw rice recipe is a traditional Mallorcan dish that is prepared with a variety of fresh and aromatic ingredients. To start, fry onion, garlic and tomatoes in a large pan with olive oil until they are very tender. Add assorted meats such as chicken, rabbit and pork cut into small pieces, and let them brown. Then stir in seasonal vegetables like artichokes, peas and mushrooms, tossing well to combine the flavors. Add a blend of traditional spices, including sweet paprika, cinnamon, cloves, nutmeg and black pepper, along with sprigs of saffron for a special kick. Then, pour in meat stock or water until all the ingredients are covered, and let it simmer for a few minutes. Finally, add the rice and cook until done, about 18-20 minutes. Season with salt and let rest for a few minutes before serving. This rice, known for its "dirty" and dark appearance, is rich in flavors and perfumes that capture the essence of Mallorcan cuisine.

Tumbet

To prepare the tumbet, start by slicing the eggplant, zucchini, potatoes and red peppers. We salt the aubergines and let them rest for about 30 minutes to remove the bitterness. Fry the potatoes in olive oil until golden and set aside on kitchen paper. Fry the aubergines and courgettes separately, following the same procedure. Then fry the peppers until tender. In a saucepan, prepare a tomato sauce by sautéing the chopped garlic and grated tomatoes until they reduce and thicken. In a baking tray, put the tumbet on top of the potatoes, aubergines, courgettes, peppers and tomato sauce. Bake in the oven at 180ºC for about 20-25 minutes. Serve hot or at room temperature as a main course or side dish. Bon Appetit! And happy new year

To prepare rabbit with onions, start by cutting the rabbit into pieces and seasoning it. In a large saucepan, heat olive oil and brown the pieces of rabbit until golden brown. Remove the rabbit from the pan and set aside. In the same pan, add a few thinly sliced onions and cook them over low heat until caramelized. Add minced garlic and cook for a few more minutes. Put the pieces of rabbit back in the pan, add a glass of white wine and a little chicken stock. Let it simmer for about 45 minutes, or until the rabbit is tender. Adjust salt and pepper to taste, and serve hot, accompanied by good bread to soak up the sauce. Bon Appetit!
